Apple Pie Bread with Cinnamon Glaze



Apples and I have a special relationship. When I was little and my military family and I lived in Georgia we had an apple tree in our backyard. I would help my Mom pick apples to eat as is or to use in desserts. Those memories have stayed with me today and when I pick up apples from the produce stand that I frequent I think about those times.


The aroma of nutmeg and cinnamon filled the apartment as this bread baked. It was hard to wait to eat a slice while taking photos. This bread tastes delicious and is filled with apple spice and everything nice. It is an apple pie in the form of bread, without the crust. It's officially the holiday season and I'm sure that you will have some holiday parties and events to go to. This bread is easy to make and goes well with a lot of sides like ice cream or frozen yogurt.





While this bread looks complicated to make in actuality it is fairly simple. With just a few ingredients this bread turned out better than I could have dreamed. The cinnamon glaze is thick and it goes well with the apple pie bread. It's the equivalent to cinnamon sugar sprinkled on top of an actual apple pie. You can see how thick the glaze is in the picture above.



Apple Pie Bread

Yield- one 9 inch loaf

Ingredients:

2 medium granny smith apples (peeled and finely chopped)
1/2 lemon
1/2 cup brown sugar (packed)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup butter (room temperature)
1/2 cup granulated sugar
2 eggs
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup milk (I used 2% milk)


Cinnamon Glaze

Yield - glazes one 9 inch loaf

1/2 cup sifted powdered sugar
1/4 teaspoon pure vanilla extract
1 teaspoon milk (I used 2% milk)
1/2 teaspoon cinnamon


Instructions:
Preheat oven to 350 degrees. Spray a 9 inch loaf pan with non-stick baking spray.

For the apple pie bread:

1. Peel and chop granny smith apples and squeeze 1/2 lemon over them to prevent browning.
2. In a small bowl mix brown sugar, ground cinnamon, and ground nutmeg.
3. Using a stand mixer combined butter and granulated sugar on low to medium speed until smooth.
4. Add eggs one at a time mixing on medium speed for one minute after each addition. Add vanilla extract.
5. Add all-purpose flour and baking powder mixing on low speed and increasing to medium speed.
6. Slowly add milk mixing on low speed and first and increasing to medium speed.
7. Mix all ingredients until combined.
8. Pour half of the batter into the loaf pan.
9. Add half of the apples on top of the batter. Press the apples into the batter using a spatula.
10. Sprinkle half of the brown sugar mixture on top of the apples. Smooth mixture with a spatula.
11. Pour the other half of the batter into the loaf pan.
12. Add the rest of the apples on top of the batter. Press the apples into the batter using a spatula.
13. Sprinkle the remaining brown sugar mixture on top of the apples. Smooth mixture with a spatula.
14. Bake for 50 minutes or until toothpick is inserted and comes out clean.
15. Cool in pan on cooling rack for 10 minutes. Remove loaf from pan and place on cooling rack until cooled completely.


For the cinnamon glaze:

1. Place powdered sugar, pure vanilla extract, milk, and cinnamon in a small bowl
2. Stir ingredients with a whisk until combined.

Notes:

The cinnamon glaze can also be used for cinnamon rolls.

Can be stored wrapped in tin foil at room temperature for 2 days. Refrigerate any remaining.

  3. this sounds so delicious! i'm a fan of apple baked goods, and cinnamon MUST be involved in some way. adding it to a glaze is a great idea!
