Feature Fridays: Brown Sugar Cookies

I love sugar cookies. They are sweet and buttery, while being fluffy In the center. They are one of the easiest cookies to make and one of the most loved cookies, besides chocolate chip cookies.

These brown sugar cookies come from one of my favorite bakers and bloggers, Joy the Baker. This recipe takes sugar cookies to another level. The brown sugar adds the sweet taste of molasses and makes the cookies richer.

Ingredients

2 cups all-purpose flour

2 teaspoons baking soda

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1 1/2 sticks (6 ounces) unsalted butter, softened

1 1/4 cups brown sugar

1 teaspoon pure vanilla extract

1 large egg

Preheat oven to 350 degrees

1. In a medium bowl whisk together flour, baking soda, salt, cinnamon, and ginger.

2. In an electric stand mixer, beat butter and brown sugar on medium speed for 3-5 minutes, until light and fluffy. Add egg and vanilla extract and beat for an additional minute.

3. Add the dry ingredients all at once, to the butter and sugar mixture. In an electric stand mixer, beat on low speed until the dough starts to come together and the flower disappears, like in the photo above.

4. Cover the bowl with plastic wrap and refrigerate for 30 minutes.

5. Place 1 tablespoon amount of dough into balls on a parchment lined baking sheet. I find it easier to make the dough balls the same size by actually using a 1 tablespoon measuring spoon.

6. Bake cookies at 350 degrees for 10 - 12 minutes. Place cookies on a bakers rack and let cookies cool. These cookies will be good for a week as long as they are in an air tight container.

  2. i would take brown sugar over white sugar any day of the week, so OF COURSE brown sugar cookies attract my attention! great recipe!
